Beetroot Acai Pancakes

This fun + colourful take on your traditional pancake is going to make you glow inside out. It's Gluten Free, Dairy Free, and Nut Free. It will also make your pee and poop red, fear not, it's just the beet!!
DOCTRINE OF SIGNATURES
People say that carrots make you see in the dark- this old wives tales is based upon the fact that when you slice a carrot into rounds it looks very similar to your eye. This theory is rooted in the ancient wisdom of Herbology and is referred to as "The Doctrine of Signatures". So what about Beetroots?

NUTRITIONAL BENEFITS OF BEETROOT
The deep red colour of beetroots hints towards it's nourishing properties for the blood and circulatory system. Being grown in soil, Beetroots contain natural chemicals called nitrates that are converted by the body into nitric oxide. This encourages the blood vessels to relax, lowering blood pressure and encouraging a freer blood flow throughout the body.
INGREDIENTS
Batter:
190ml oat milk (or 95ml milk + 80ml orange juice)
3tbsp Grow Wild Organic Acai Powder (immune boosting)
1tbsp ground flax + 3 tbsp water
30g tapioca / soya flour (to bind)
100g cooked beetroot puree
1tbsp Apple Cider Vinegar (fluffiness)
100g buckwheat flour
100g rice flour
2 tsp baking powder
1/2 mashed banana
1/2 tsp cinnamon
1/2 tsp ginger
Zest of 1 orange
Pinch of salt
Toppings:
Tahini
Coconut kefir / vegan yogurt
Cacao nibbs
Coconut flakes
pumpkin seeds
METHOD
Whisk together flax and water- set aside for 10 mins to expand.
Mix all dry ingredients in medium bowl.
Add flax seed egg + milk / juice.
Fold in the banana and magical beet.
Heat coconut oil in pan on medium heat.
Cook for 2/3 mins until bubbles start to appear and edges start to dry out.
Flip and cook for a couple of minutes more.
EXTRA FLUFFINESS TIP: Don't press down or flip back over to cook original side.
